Grape-Oatmeal Cups

Who doesn’t love the smell of oatmeal-cinnamony goodness coming out of the oven?  These grape-oatmeal cups are a breeze to whip up and make for an easy grab-and-go breakfast all week long!    

Paleo, Gluten-Free, Vegan, Refined Sugar-Free

Ingredients
1 ½ Cups Non-Dairy Milk
2 Flax Eggs (2 TB ground flax seed mixed with 6 TB warm water, sit for 10-15 mins to gel)
½ Cup 100% Pure Maple Syrup
1 TB Coconut oil, melted
2 tsp Vanilla extract
1 tsp Baking powder
1 tsp Ground cinnamon
¼ tsp Salt
3 ½ Cups Old-fashioned gluten-free oats
1 Cup halved grapes + extra for garnish

Directions
Preheat oven to 350-degrees.

Oil a muffin pan well or use a silicone muffin “pan”.

Whisk wet ingredients (milk through vanilla) in a large bowl.  Stir in dry ingredients (baking powder through oats) until well combined.  Add in 1 cup of grapes and incorporate into the mix.

Divide batter evenly into muffin cups and garnish with additional grapes.

Bake for approximately 20 minutes or until set.
