Grape Compote & Cambazola Cheese en Croute

Compote Ingredients
2 lbs Pretty Lady grapes
1 cup sugar
1/2 cup water
Zest and juice of one lemon
2 pieces star anise

Compote Directions

In sauce pan, place all ingredients. Bring to a boil and return to a simmer. Let simmer, about 20 minutes until grapes release juice, and liquid reduces, thickening the compote. Remove star anise. Let cool.

1 wedge cambazola cheese
1 sheet frozen puff pastry
1 egg, beaten


Place puff dough on lightly floured board. Place cooled compote in middle of dough. Place cambazola on compote and fully wrap both in a neat package, gluing pieces together with egg. Flip over, seams down, and place on oiled pan. Brush dough with egg. Using fork, scrape tines in a crosshatch pattern to create pattern on dough. Freeze the cheese package for 3 hours before baking. Bake in 425 degree oven until deep golden brown. Let cool for 20 minutes before serving. Serve with crackers or bread.
