Grape Bars

Here is a perfect example of nature’s sweetness not needing much help at all!  These bars are refined sugar-free and get their sweetness from a few natural sugars but mostly from the grapes.  They make a great dessert but are healthy enough to have for tea time snacks, as well! 

Paleo, Gluten-Free, Vegan, Refined Sugar-Free

Crust + Topping Ingredients
3 Cups Almond flour
2 TB Tapioca flour
1/3 Cup Coconut Oil
1/3 Cup 100% Pure Maple Syrup
1 TB Vanilla
1 tsp sea salt

Grape Filling Ingredients
4 cups grapes, halve about half of them
1/3 Cup Coconut Sugar
1 TB Tapioca Flour
1 tsp Vanilla

Directions
Preheat oven to 350-degrees

Line a 9×9-inch pan with parchment.

Mix all crust/topping ingredients in a large bowl and divide into thirds.  Press 2/3rds of mixture into pan and bake for 10 minutes.

Meanwhile, combine grape filling ingredients in a sauce pan and cook over medium heat for a few minutes, smooshing grapes against the sides of the pan.  Sauce should thicken slightly (5-10 minutes).

When crust comes out of the oven, spread grape filling over the top and crumble remaining crust mixture on top.  Bake for another 20 minutes or until set. May need to tent if browning too quickly.

Bars are VERY soft when warm so be sure to fully cool before cutting.  I find these are best straight out of the refrigerator. 😊
