1 acorn squash
1 yellow onion, julienned
1 Tbsp pine nutes
2 cups Pretty Lady grapes
1 cup raclette cheese, shredded
1 Tbsp fresh thyme leaves, chopped
2 Tbsp olive oil
Preheat oven to 350. Cut squash in half, scoop out seeds. Sprinkle with salt and pepper, and place flesh side down in oiled pan. Bake in oven for 30-40 minutes, or until flesh is soft. Remove and let cool.
Place grapes on a sheet pan and place in oven with squash until grapes are soft, about 30-40 minutes, remove and let cool.
In large saute pan, saute onions in olive oil at medium heat until hey begin to brown. Add 2 Tbsp water to loosen onions and deglaze pan. Cook until soft and sweet, let cool. In large bowl, mix in onions, pine nuts, grapes , thyme and cheese. Stuff mixture into cavity of squash. Bake in 350 degree oven, until top browns and cheese is melted. Serve hot.
