
Ingredients
- 2 cups Green Applause Grapes, halved
- 1 cup cucumbers, thinly sliced
- 1 small red onion, thinly sliced
- ¼ cup goat cheese, crumbled
- ½ cup fresh mint leaves, chopped (plus more for garnish)
- 1 clove garlic, minced
- 1 Tbsp white wine vinegar
- 1 Tbsp olive oil
- Salt and cracked black pepper, to taste
- Fresh lemon slices, for finishing
Directions
- Mix the Base
- In a medium bowl, combine grapes, cucumber, red onion, and mint.
- Dress the Salad
- In a small bowl, whisk together garlic, white wine vinegar, and olive oil.
- Pour over the salad and toss gently to coat. Season with salt and pepper to taste.
- Chill and Finish
- Cover and refrigerate for at least 1 hour to let the flavors meld.
- Just before serving, top with crumbled goat cheese and a squeeze of fresh lemon juice.
- Garnish with extra mint leaves and lemon slices.
