Effective Management of Food Safety through safe handling practices throughout every stage is the decisive factor in preventing and controlling compromised food. The basic elements of our Food Safety Program are described below:
The full support and commitment of Management cannot be overstated. Without that vital element, this undertaking could not flourish. The Dulcich Family has embraced this task both for the needs of today and for those of the future. This force behind formation and implementation of safe, sound, and positive procedures starts at the root of the organization and disseminates out to the rest of the branches. With that tone and intent emanating from these owners, program development, review, and employee involvement are understood by all to be of paramount importance. The set policy is accepted, endorsed, and supported, companywide; this is everyone’s responsibility and a company directive. Employees participate in our Cold Storage Food Safety Committee, and are involved in the policy development, hazard analysis, and warehouse sanitation inspections.
As part of our Global Food Safety Program, internal audits are conducted regularly by our Food Safety Coordinator. Being a seasonal operation (June through December), we are audited once a season by a Certified Third Party Auditor.
To ensure we have traceability in case of a recall, we conduct annual mock recalls consisting of different scenarios.
At Dulcich, we work closely with our Pest Management Company to ensure our facility is protected from pests and rodents using the safest means possible.
Training is conducted annually for all Cold Storage/Receiving Personnel and for new hires.
The Hazard Program has been established with the help of Senior Management. Although the burden of food safety is in the hands of management and supervisors, all employees serve as inspectors when product moves through their area. Dulcich cold storage employees are authorized to hold or reject product found to be out of compliance, subject to the evaluation and final approval of authorized management.
